When you trim a tenderloin yourself you can prepare several incredible cuts. You can cut a chateaubriand from the center use the tail-end for a premium stir fry bake a delicious beef Wellington or use the butt-end for a roast and the chain for some great kabobs. At Wild Fork Foods we predominantly source our beef from Colorado and Nebraska where the cold weather attracts some of the best-quality English and continental breeds such as Angus Hereford and Limosime.
