Our Cold Smoked Atlantic Salmon is impeccably fresh hand-filleted and farm-raised in a responsible manner. After briefly curing in pure sea salt and brown sugar the salmon sides are smoked in small batches and tended to by hand in open-fire burning smokehouse using oak logs from the Santa Ynez Valley. The result is clean salmon flavor with a hint of smoke and delicate texture. Try it on crusty bread with crème fraiche and a sprig of dill or simply enjoy with cream cheese on a toasted bagel.
